Cooking make nutrients lost !?

Here we will talking about cooking as cooking is a process of making foods edible. We all craving for foods everyday, everytime....

My friends, family members and clients always ask " Does cooking will make the nutrients lost ? "

The answer is YES. What we focus today is vegetable...

In fact, you will loss some of the nutrients in yours foods regardless of cooking method. What we can do is to try our best to retain as much nutrients in the foods during cooking.

Most people will think that HEAT is the only culprit that make the nutrients loss, but remember that light, heat, air, alkaline and acid all can destroy nutrients especially vitamins.

Here are several tips to retain nutrients:

  • -Use as little water as possible during cooking

  • -Steaming, stir-frying and microwaving are the best cooking method to retain nutrients

  • -Try not to add baking soda (alkaline: some cooks add it in order to intensify vegetable's color & reduce cooking time)

  • -Save the leftover water to use as vegetable stock for gravy or soup

  • -Cut the vegetables in large (not too small) just before cooking

  • -Let the water simmer (85 C to 93 C) rather than boil vigorously (100 C) during cooking vegetable
